Arepas with Chicken and Queso Fresco

Bored of a normal sandwiches? Try arepas! This corn based sandwich is so yummy with just some simple meat and cheese or packed with veggies.

Honey mustard marinated chicken is delicious covered in queso fresco. Butter the inside of the arepa to make it even better!

Tips for this recipe:

  • To make the chicken more saucy, add all of the honey mustard you marinated the chicken in to the pan when you cook it. Once you remove the chicken to shred it, add it back into the pan with the dressing and continue the recipe as usual. Alternatively, if you prefer less sauce, take the chicken out of the marinade to cook it in the pan.
  • Placing the arepas in oven while you finish making the chicken or until they are ready to be served will not only keep them warm but also help make sure they are cooked thoroughly!

Ingredients:

Arepas:
2 cups Arepa flour (Pan)
1 teaspoon salt
3 cups water
2 tablespoon olive oil
Chicken Filling:
1 1/4 pounds chicken breast
3/4 cup honey mustard salad dressing
2 tablespoons olive oil
1 teaspoon salt
1/3 cup onion
1 clove garlic
4 tablespoons cilantro
2 1/2 tablespoon queso fresco

Instructions:

  1. Poke holes in chicken breasts with fork and marinate in dressing in the fridge (1 hour).
  2. Begin making arepas by dissolving salt in water. The slowly add arepa flour to water in 1/4 – 1/2 cup increments making sure that there are no clumps.
  3. Cover, and let rest while preparing filling (10 – 25 minutes).
  4. Chop onion and cilantro and mince garlic while waiting for chicken and arepa mixture. Crumble cheese and set aside.
  5. Make patties with arepa mixture (4 inches wide by 1/2 inch thick).
  6. Heat 2 tablespoons oil in pan to medium heat and cook arepas until they are brown on both sides.
  7. Place arepas on a baking sheet and keep warm in oven at 350 F until ready to serve.
  8. Heat 2 tablespoons olive oil in pan on medium and cook chicken covered (5 minutes each side).
  9. Remove chicken from pan and shred.
  10. Add shredded chicken back to pan and add salt.
  11. Add onion, garlic, and cilantro to chicken and stir to combine (10 minutes).
  12. Add two tablespoons of honey mustard dressing, stir, and serve!

The best way to enjoy arepas is to slice open the patty and butter the inside before adding your filling. Then stuff it full of all your yummy ingredients and enjoy!
