Chicken Bacon Kabobs

A delicious meal that makes you feel like you’re eating dinner on vacation. Pineapple and bacon pair well on these kabobs smothered in yummy Hawaiian sauce.

These kabobs are packed with bell pepper, onion, pineapple, bacon, and chicken. You’ll be full to the brim after this dinner.

Tips for this recipe:

  • If you like crispy bacon, try frying the bacon before you grill it. We have used our grill pan and baked the kabobs in the oven, and the bacon always comes out soft.
  • A great topping for these kabobs and in the picture above is furikake. You can find some at a local Asian foods market or make some of your own! The furikake that we have is mainly seaweed and sesame seeds.

Ingredients:

2 pounds chicken breast
1 large pineapple
2 large red bell peppers
1 large onion
12 strips of bacon
6 long skewers
Hawaiian Sauce:
1 1/2 cups pineapple juice
1 1/2 tablespoons cornstarch
1/2 cup brown sugar
2 tablespoons soy sauce
1/2 teaspoon salt

Instructions:

  1. Soak skewers in 1 inch of water while preparing sauce and other ingredients (10 – 30 minutes).
  2. Combine Hawaiian sauce ingredients in a medium sauce pan. Stir until the cornstarch is dissolved. Bring mixture to boil and reduce to medium heat to simmer (2 minutes). Set aside.
  3. Cut chicken, pineapple, bell pepper, and bacon into 1 1/2 inch pieces. Alternate skewer ingredients and brush with vegetable oil.
  4. Preheat grill to medium high. Grill kabobs, turning a couple of times until thoroughly cooked (10 – 15 minutes).
  5. Cover kabobs with Hawaiian sauce and serve!
