Simple Beef Stew

Every now and then you just need a good old fashion hearty stew. This is the perfect meat and veggie stew for a cold night or just when you feel like you need to get back to the basics.

Do you end up with a handful of half used vegetables at the end of the week or can’t remember why you bought an extra bell pepper? Make a beef stew and throw all of those odds and ends in the pot to use it up!

Tips for this recipe:

  • Taste as you go! Add extra seasonings along the way and it will make the stew delicious.
  • The beef stew calls for assorted vegetables. We added broccoli, carrots, onions, celery, and potato. Try a mix of your favorite vegetables and in the end it’s a stew so anything is fine!

Ingredients:

2 tablespoons vegetable oil
1 pund beef stew meat
1/4 teaspoon salt
4 cups assorted vegetables (potatoes, carrots, celery, onions, etc.)
1 14 ounce can beef broth
1 8 ounce can Hunt’s® Tomato Sauce with Basil, Garlic and Oregano

Instructions:

  1. Heat 1 tablespoon oil in large skillet or pot over medium high heat.
  2. Add meant and salt, stirring until browned (5 minutes). Remove from skillet and set aside.
  3. Add remaining 1 tablespoon oil and cubbed vegetables. Cook vegetables until crisp tender, stirring occasionally (5 minutes).
  4. Combine meat with vegetables and pour in broth. Bring mixture to a boil. Reduce heat to a medium low simmer, stirring occasionally (15 minutes).
  5. Stir in tomato sauce and simmer until meat and vegetables are tender (15 minutes). Stir occasionally until ready to serve!
