Skirt Steak with Avocado Chimichurri

Fresh avocado chimichurri over warm juicy steak? Yum! This recipe is great for someone who loves steak and wants to try it in a new way!

Chimichurri is an uncooked sauce served with or over meat. This sauce is avocado, oil, vinegar, cilantro, and much more! Make it and let us know if you found your favorite new way to eat steak.

Tips for this recipe:

  • Don’t overcook your steak! Act like you are making fajitas and cook the steak to your desired doneness.
  • Make the chimichurri as far ahead of time as you can and let it rest in the fridge. This will allow the flavors to combine. Chimichurri is also great to dip bread in or eat over a salad. It’ll be your new favorite sauce!

Ingredients:

Avocado Chimichurri:
1 cup cilantro leaves
1 cup parsley
1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon red pepper flakes
1/3 cup red wine vinegar
1/2 cup olive oil
1 medium diced avocado
Skirt Steak:
1 pound skirt steak
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil

Instructions:

  1. Add cilantro, parsley, garlic, salt, cumin, and red pepper flakes to a food processor or blender. Pulse until leaves are coarsely chopped and 5 pulse times. Add red wine vinegar and pulse 5 more times. Add olive oil and pulse 5 times.
  2. Transfer chimichurri sauce to medium bowl. Cut avocado in 1/2 inch pieces. Add avocado to sauce and stir to combine. Cover and refrigerate until ready to serve.
  3. Pat steak dry with paper towel. Generously season each side of the steak with salt and pepper.
  4. Heat large skillet over high heat until hot (3 minutes). Add olive oil.
  5. Use tongs to add steak to pan. Sear first side until browned or desired doneness (2 – 4 minutes). Flip and repeat.
  6. Transfer steak to cutting board, cover with foil, and rest (10 minutes).
  7. Slice steak against the grain and transfer to a plate to serve. Top with chimichurri and enjoy!
