Slow Cooker Chicken Curry over Quinoa

This is an easy curry recipe that you can set in the slow cooker and forget about it! It’s an easy and yummy curry that you can serve over anything.

Many curries include coconut milk, but this one does not so keep that in mind depending on what you prefer. If you wanted to add a splash of coconut milk, we’d definitely recommend you to try it!

Tips for this recipe:

  • You can use any salsa you like! This time, we used up the last bit of a jar of verde salsa and a regular salsa. It turned out delicious.
  • The hard thing with slow cooker meals is remembering to start early enough in the day! If you have a slow cooker planned, prep the night before so that it’s easier in the morning or during lunch time to get it started.

Ingredients:

4 – 5 boneless skinless chicken breasts cut in half
1 650 mL jar thick and chunky salsa
1 onion
2 tablespoons curry powder
1/2 cup cream cheese

Instructions:

  1. Place chicken in slow cooker.
  2. Combine salsa, chopped onion, and curry powder and pour over chicken. Cover with lid.
  3. Cook on low for 8 – 10 hours or high for 5 hours.
  4. Stir in cream cheese and place lid on for another 15 minutes.
  5. Stir and serve over rice or quinoa!
