Crispy Quinoa Patties and Avocado Yogurt Dip

Do you like French’s fried onions? You’d love these quinoa patties! These patties are so yummy smothered in the avocado yogurt dip and the crispy edges taste like fried onions.

We paired our quinoa patties with creamed corn, which is a delicious fall side. You definitely won’t regret trying this recipe!

Tips for this recipe:

  • If you want to add a little more flavor to your patties, add your favorite spice. A little cayenne or chili powder goes a long way!
  • Don’t overcook the patties when you fry them. Remember you’ll put them in the oven as well so they can get a little dark (like ours did)!

Ingredients:

1 cup cooked quinoa
2 eggs
1/2 red onion
1/2 cup mozzarella cheese
2 cloves crushed garlic
1 cup bread crumbs
Water
1 tablespoon canola oil
2 tablespoons cilantro
1/2 cup yogurt
1/2 avocado
Salt
Pepper

Instructions:

  1. Preheat oven to 400 F.
  2. Combine quinoa and eggs in a medium bowl. Salt a pepper mixture to taste. Stir in onions, cheese, and garlic. Add bread crumbs, stir, and let sit until crumbs have absorbed some of the moisture. Add water if the mixture feels too dry. Form mixture into 6 – 8 patties.
  3. Heat oil in a large skillet over medium low heat. Place quinoa patties on heated pan until the patties are a light golden color (7 – 10 minutes).
  4. Place quinoa patties on a baking sheet lined with parchment paper. Brush oil on the top of the patties and bake until desired golden color (15 minutes).
  5. Whisk together cilantro, avocado, and yogurt in a small bowl. Season with salt and pepper to taste.
  6. Serve dip over patties or on the side.
