Sweet Potato Black Bean Casserole

A veggie packed casserole that is healthy to the max! This recipe is vegetarian and can be loaded up with your favorite toppings for a yummy dinner.

Sweet potatoes paired with chili powder and cinnamon taste great in this easy casserole. Just chop up all your veggies and throw it in the oven! Casseroles really make dinner easier in the evening.

Tips for this recipe:

  • If you want more layers, add a few more tortillas in between the sweet potato mixture. The tortillas at the bottom disappeared into the veggies so load up on the tortillas!
  • If you wanted to make this meal vegan, use vegan cheese or no cheese! This casserole is packed with veggies so it will definitely fill you up.

Ingredients:

1 large sweet potato
1 15 ounce can black beans
1 14 ounce can diced tomatoes
1/2 onion
1 bell pepper
1 teaspoon chili powder
1 teaspoon garlic salt
1/2 teaspoon cinnamon
1 cup salsa
2 – 4 tortillas
4 ounces shredded cheese
Salt
Pepper
Cilantro
Avocado
Guacamole
Sour Cream

Instructions:

  1. Preheat over to 400 F. Spray 8 x 8 pan with cooking spray.
  2. Cook sweet potato in the microwave until softened (3 – 5 minutes).
  3. Dice sweet potatoes, onion, and bell pepper and drain black beans and tomatoes. Combine in a large bowl with chili powder, garlic salt, and cinnamon.
  4. Spread 1/2 cup salsa on the bottom of the baking dish. Set one layer of tortillas on top of salsa, ripping into strips to fully cover dish. Spoon a layer of sweet potato mixture over tortillas. Spread remaining 1/2 cup salsa over sweet potato mixture.
  5. Add another layer of tortillas and the rest of the sweet potato mixture. Top with cheese.
  6. Bake uncovered until cheese is melted and top is browned (20 – 25 minutes). Let stand for 5 minutes.
  7. Cut into squares and top with additional salsa, cilantro, and or avocado. Enjoy!
