15 Minute Peanut Sauce Noodles

This is a great recipe to have in your back pocket. Just make sure you have some noodles on hand in the pantry and you can whip this up in a pinch!

Our go to order anytime we go out for Thai food is Pad Thai. This recipe is easy and satisfies that craving! Of course, if you have a jar of Pad Thai sauce on hand you can definitely mix a little of that in too šŸ˜‰

Tips for this recipe:

  • If you transfer your sauced noodles back into a pan to reheat the noodles, add an additional tablespoon of sesame oil or water so that you don’t evaporate the sauce away.
  • Adding a whole tablespoon of sriracha to the meal, it may be too spicy for the average Joe. Start with half a tablespoon of sriracha if you aren’t a spice fanatic and add more as needed while you’re blending the sauce.

Ingredients:

150 grams rice noodles
4 tablespoons peanut butter
2 cloves garlic
1 tablespoon soy sauce
1 tablespoon sriracha
1/2 tablespoon lemon juice
1 tablespoon honey
5 tablespoons water
1/2 tablespoon sesame oil
Sesame seeds for garnish
Green onions for garnish
Crushed peanuts for garnish

Instructions:

  1. Boil rice noodles according to package instructions. Drain and set aside.
  2. Add all remaining ingredients (other than garnishes) to a blender and mix until smooth.
  3. Pour peanut sauce over cooked noodles and mix well. If your noodles have cooled down, you can place sauced noodles back in a pan and heat them for an additional minute until they are thoroughly heated.
  4. Garnish with sesame seeds, spring onions, and crushed peanuts and serve!
