This was a fresh recipe that was a nice change from the savory dinners we usually have. Mango paired with avocado on top of chicken seasoned chili powder is so easy!

If you end up with some leftover mango avocado salsa it pairs well with tortilla chips and over rice. Since the recipe is basic, it is very versatile and the possibilities are endless!

- Do you prefer a chunky salsa? Follow the recipe exactly as it states below. We pulsed our salsa in the blender to make a smoother salsa and it was delicious 🙂

Grilled Chicken with Mango Avocado Salsa

Ingredients:
| 4 thin boneless skinless chicken breasts |
| 2 teaspoons olive oil |
| 2 teaspoons chili powder |
| salt to taste |
| 1 cup diced mango |
| 1 cup diced avocado |
| the juice of 1 lime |
| 1/2 cup minced red bell pepper |
| 1/4 cup chopped cilantro |
Instructions:
- Heat a grill over medium high heat. Drizzle olive oil over chicken breasts and then sprinkle chili powder and salt to taste.
- Grill chicken for 4 – 5 minutes on each side or until cooked through (160 Fahrenheit).
- While chicken is cooking, combine the mango, avocado, red bell pepper and cilantro in a bowl. Stir in lime juice and salt to taste. (Or blitz in blender!)
- Spoon salsa over cooked chicken breasts and serve.
