Some days you just need a classic recipe that’s easy to throw together and is delicious. For us, that’s Instant Pot baked potatoes. We always end up at the end of a week with too many potatoes left over from the 5 lb bag we bought and are craving a homy meal.

For this baked potato, we used our left over cheese sauce from the Mexican Chicken and Cheese Sauce recipe which you can check out by clicking here. If you don’t have left over queso like we do, substitute store bought or top with your favorite shredded cheese. You can never go wrong with some shredded cheddar cheese sprinkled on top.
Tips for this recipe:
- Use what you’ve got! Do you have left over pulled pork or a half used package of bacon? Throw it on top! Baked potatoes are a great meal that can help you eat through your left overs. Make a few extra potatoes and save them for lunch so that way when you end up with left overs throughout the week, you have an already cooked potato to pair them with. The more the merrier! Really a baked potato gets better as you pile on the toppings. Don’t be shy, put some more!
- These instant pot baked potatoes don’t get a crispy skin like you would in an oven. If you are a die hard oven baked potato lover, no worries! This recipe really is for those that want a quicker way to make a batch of baked potatoes.

Recipe:
Instant Pot Baked Potatoes
Ingredients:
| 4 – 6 medium potatoes |
| Toppings Pictured: |
| 1 can of Hormel Chili |
| Bacon bits |
| Queso |
| Butter |
| Salt and pepper |
| Optional Toppings: |
| Green onions |
| Sour cream |
| Shredded cheddar cheese |
Instructions:
- Wash and pat potatoes dry. Pierce potatoes with a fork 5 – 6 times.
- Add a cup of water to the instant pot. This should be enough water to cover the bottom of the pot but the water level shouldn’t be higher than the trivet wire rack.
- Place pierced potatoes on trivet, stack if needed.
- Put lid on the instant pot and seal the valve.
- Press manual or pressure cook button and ensure HIGH pressure is selected. Set cook time to 12 minutes. Add an additional 4 minutes to cook time if potatoes are large or 8 minutes if extra large.
- While the potatoes are cooking, grab out any toppings you would like! See our ingredient list for suggested toppings.
- Once potatoes have cooked, allow to naturally release for 2 minutes less than the cook time used. For example, medium potatoes would need to naturally release for 10 minutes. Quick release once appropriate time has passed.
- Remove potatoes and top with your favorite things!
